In addition to his duties as an educator, Dominic and his wife, Lynda, have owned a catering company for eleven years. Okay, we will now try an experiment. Go to your kitchen and get your measuring cup. I will wait for you. But hurry! Okay, fill the cup with rice and pour it into a bowl. Now look at it! Can you now visualize a cup of rice, flour, sugar, etc.? Now take out a regular teaspoon and your measuring teaspoon. Put water in the measuring teaspoon and then pour that into your regular teaspoon. If your spoon is like mine, it will hold the same amount of water. Try this now with your measuring tablespoon and your soupspoon. Are they close, exact, or completely different? Mine happen to hold the same amounts. The fact of the matter is that the majority of you have been cooking for years, and you already know and can see the approximate amounts. So why do you choose to measure? Because you need to feel secure in what you are doing. That is the bottom line! Pour a teaspoon of salt in the palm of your hand without measuring. Come on now try it! Check it with your measuring spoon. Did you come close? Of course, you did! Give yourself some credit. Untie the ropes that are holding you down and let yourself go. In my youth, I remember my Nonna, Cecelia, saying a little of this and a lot of that! She never measured anything! She was a little Italian woman from Abruzzi, Italy. Mamma Mia, her food was delicious! She made everything from scratch with no modern appliances or pasta machines. If she were alive today and watched us using all of our new gadgets and machines, she would probably slap all of us and say something like, "What’s the matta for you? Don’t chew wanna learn nuttin’?" Yes, she was an English major! Just kidding! However, I think you get the idea. Now, look at any recipe in this book or one of your favorites. Can you honestly sit there and think that you cannot picture the amounts of the ingredients? I bet you can! You may not be perfect, but you should come close. Remember, on any given day, take three people with the same recipe and, most likely, you will get three different results! Cooking should be fun! It is not rocket science!

Fun, entertaining, and good food

If you love good food, and music(and even if you do not) believe me this is the cook book for you. As you beat your eggs, and glaze your favorite dessert, you can dance, and sing to the sensual voice of Cuccina Dom. This would make the perfect gift for everyone! You can buy it for a firend, family member, and makes a great hostess gift! These recipes would be a great idea for couples or groups of friends to make in the kitchen. I have enjoyed this book and highly recommend it to anyone.
